Tasting Notes
Plum with brick red hue. A medium-bodied Cabernet Sauvignon, soft and supple on its entry yet balanced perfectly over resolved grape and oak tannin. The mid-palate is silky with blackberry and rich, dark cherry. Aged in an old-world style in seasoned French Oak, the finish recalls tobacco, cedar and the classical bordelaise pencil lead notes.
Food Pairing
This elegant and balanced Cab makes a great pairing with meats like steak or roasted lamb, Portobello mushrooms or cheeses like aged cheddar.
Tech Details
A majority of the grapes are harvested from vineyards on the west side of Paso Robles-Willow Creek, Templeton Gap, and a small amount from other AVAs to add intrigue and complexity to this 100% Cabernet Sauvignon. The complexity is achieved through the blending of different geographical areas, not varietals, in this wine.
The grapes are picked ripe at 24 brix. Partially destemmed directly to tank. 48 hour cold soak, 3 pump overs for 10 days, then 1-2 for the next 5 days. Aged 10 months in new, one and two year old French oak barrels from Taransaud.
